Chicken Tortilla Soup

I threw this together for lunch with ingredients I had in the kitchen. It was wonderful! You could add black beans which I will do next time. You could also substitute milk or half and half instead of the cream. We all know I don't cook low fat!

Be careful because this soup is so good you may just swallow your spoon while trying to snarf it down.
Chicken Tortilla Soup
1 tablespoon chopped garlic
1/4 cup green pepper, chopped
1/2 large onion, chopped
2 cups water
3 chicken bouillon cubes
2 cups heavy cream
1 cup salsa
1/2 -1 cup frozen corn
1 can black beans, rinsed
1-2 cups chicken, shredded
cumin powder
chili powder
2 tablespoons corn starch
1 cup cold water
fresh cilantro, torn
tortilla chips
1 fresh lime
grated cheese
Saute garlic, green pepper and onion in a tablespoon of olive oil until soft. Add water, bouillon, cream, salsa, corn, chicken, and spices until boiling. Stir corn starch into cold water and add to soup slowly. After it's thickened add fresh cilantro and lime juice. Serve hot with tortilla chips and grated cheese.

Yum! It's definitely the season for soup, I'll give this one a try. I just boiled a chicken yesterday and put the meat and broth in the freezer, so this should be a snap to throw together.

Mmmmmm... this is a little different than the chicken tortilla soup I make- this one sounds much better!! Of course, the cream would definitely do the trick!!

Love the idea of a creamy tortilla soup. My kids won't eat non-creamy without dousing it in sour cream anyway, so why not make it that way to begin with. I can't wait to try it!!1
