Baked Oatmeal

Is baked oatmeal a southern thing? I had never even heard of it until I saw a recipe for it on the Internet a few years ago. We make it all the time now and my kids love it. It might have something to do with the fact that it tastes like oatmeal cookies!
Baked Oatmeal
3 cups old fashioned oats
1/2 cup brown sugar
1/4 cup butter
2 eggs
2 cups milk
2 teaspoon baking powder
1 teaspoon salt
Mix all ingredients together and pour into 13x9 buttered pan. Bake at 375 degrees for 25 minutes. Scoop it into bowls and top with milk, dried fruit and nuts.
I'm going to try putting this in the crockpot tonight so we can have breakfast all ready for us in the morning. Do you think we will be able to sleep with that yummy smell coming from the kitchen?

Ok, I tried this in the crockpot and it did not work. There wasn't enough liquid so it dried out. I cooked it about 6 hours. I'm going to modify this recipe and try it again. Stephani Gallagher (no relation!) says that you need lots of water and you have to use steel cut oats so they don't overcook. But I like my recipe with the butter and egg and milk. I'm going to try it again tonight and let you know if I get better results this time. Of course the plain old baked version works every time!
Tonight I'm going to try Ann's method that Lucy sent me. I'm hoping this will make clean up easier. Thanks you two! I also loved Kimberly's idea (see the comments below) to use a timer for the crockpot. Brilliant! I know the new crock pots have timers on them but mine is so ten years ago. It actually has a broken handle so who knows, sweet Stranger might surprise me with a new crockpot one of these days!
Here is my new verdict on the crock pot oatmeal. I love the steel cut oats! This morning we added a spoonful of peanut butter to our oatmeal and sliced bananas. Yum! Tonight I added a chopped apple. I'll let you know how it tastes in the morning.
Crockpot Oatmeal
1 cups steel cut oats (rinsed a couple times to wash)
4 cups water
1/4 cup brown sugar
Combine ingredients in a bowl that will fit into your crockpot. Pour water into the outer pot till it's halfway up the outside of the inner bowl. Cook on low all night. The oatmeal won't get overdone and stick to the crock pot. It makes clean up so much easier!

Oh yummy! My family loves baked oatmeal with diced apples! If you want to be "naughty" add chocolate chips instead. ;)
I've never had it! Your recipe called for baking it. Can you put it in the crock pot all night long?

Details! I want details. Do you cut it up into bars when you're done? Or scoop it into bowls and pour the milk on it? Or do you just hand everyone a spoon and put the pan on the floor and dig in?

I heard of a fabulous idea that I've never been gung-ho enough to try...you get one of those timers that turn your Christmas lights on at a specific time, etc...and plug your crockpot into it. Great for when you need a shorter cook time.
very cool... i'm significantly lazier than anyone i know, so i must stay-tuned to find out if it works in the crockpot.

Ok . . . this sounds really good! I think I might try it tonight too. My son leaves for work at 5:30 in the morning, so he could even grab a bowl while we're all still sleeping!

I'm with the crowd, this sounds most pleasing. I tried it and it was good. We ate it with cooked cinnamon apple slices. It was a really nice change of pace from our normal breakfast. Thanks!

I'm going to do the baked version for my family tomorrow morning. I got to wondering when the last time I made them a hot breakfast was...and I couldn't remember. Eeep!

Our recipe for baked oatmeal includes a lot of blueberries and oh how I love it. I pretty much toss blueberries into anything--it's always better with blueberries.
I was reading about putting the oatmeal in a bowl inside the crockpot with water in the actual crockpot itself. Then I was reading your post about bags and it got me thinking that you could likely put all the oatmeal ingredients in a bag and then fill the crockpot with some water and let it cook.
I have also tried the steel cut oatmeal in my rice cooker..

Glad you found steel cut oats. I like that slightly nutty flavor. And I *love* baked oatmeal (never tried it in the crockpot, though). Like Scribbit, my recipe called for blueberries. I had it at a Family Camp and thought I'd died and gone to Oatmeal Heaven. They served it with yogurt to spoon over it. Mmmm...

(The "bain marie" method I described in that post you cited does soften it up. I add a tiny bit more water than the can of steel oats says to, but it might depend on the crockpot. I switched crockpots after receiving a new one, so I had to modify slightly to match its quirks.)
Wow, Cheryl, that is my kind of thinking! If that would work we would be in Clean Up Heaven! No crockpot scrubbing, just toss the bag!!!
