Taco Soup
I made some great taco soup yesterday that my kids think is so fabulous it should be blogged about. Here's how I did it the lazy way. Lazy cooking is very important in my life because otherwise we're eating pancakes again, not that there's anything wrong with that.
- Start with a crockpot.
- Throw a frozen hunk of uncooked low fat ground beef in it. One pound works.
- Add some frozen corn.
- One or two cans of beans, any kind.
- One or two cans of chicken stock
- One or two cans of chopped tomatoes (blended or not)
- Tiny can of chopped green chilies.
- 1/2 A jar of salsa that may or may not still be edible.
- T's and t's of cumin, red pepper, garlic seasoning and chili powder.
- If your chicken stock isn't salted then you will need to add salt.
- Cook on low, breaking up the hamburger as it thaws, until you're ready to eat.
- Serve with corn chips, grated cheese, sour cream.
Make a big pot because it will taste especially good the next day when the temperature drops twenty degrees and you don't want fist fights breaking out over taco soup.

Clarifying.....when you throw in the frozen ground beef....is that already browned? Or raw/frozen?

Good question Karen. I used uncooked low fat ground beef. That's why it was so easy!
Oh I havn't been here for so long. Have meant to but havn't... Need to work on my time management agiain. Summer's such an odd time for me because I don't work then. Now I'm back and need good habits. Your soup sounds great will need to try it. Maybe I'll make it tomorrow for Tuesdays dinner. Thanks for sharing. I'll be back.
Mmmmm, our family loves chili/taco soup as well!! Hmmm, maybe if I get started now, that's what we can have for supper....

This is definitely a keeper. We love Taco Soup around here because it's so easy (I don't even drain the cans of beans or corn when I throw them in) but I've never tried the crock pot method. That's even better! I have to admit I use the ready-made taco seasonings so I'm even lazier than you in that regard. Sometimes I do a sniff test on the salsa first before I dump it in, but only if I feel like it.
YUM! I love Taco Soup and could eat it every week from October until March. I just don't like it when it's so hot outside. I never knew you could put raw ground beef in the crockpot. I always brown mine first and then throw everything in to simmer for a few hours.
